well, thanks to the running commentary on chat by DD of his gajjar halwa eating a few days ago, my taste buds were awoken and started demanding the same. i resisted them but finally, yesterday, i cdn't bear it any more. after-all, SG got a 100 and GC gets yet another slap on his face - reason enough to celebrate.

i took 4 carrots, dumped them into the food-processor with the grating disc fitted, drowned the grated carrot in a gallon of milk and boiled it till the cows came home - rather, till dhoni decided to wake up and score runs.

added a table spoon of ghee and took the sugar jar out - at that moment, my resolve to diet till i go on my next vacation started pricking my conscience - i guiltily put the sugar jar back, took the Splenda packet and dumped a scoop of that. didn't bother about almonds and other embellishments.

while it may not be the best gajjar halwa in the world, it is the healthiest one and my taste buds are silenced.

may i request the senior mods to ban DD if he starts food talk on chat?

it was full cream milk - i shd try the low-fat ones the next time. it was a litre of milk and not a gallon.

splenda worked just fine. um...dunno what to substitute ghee with except avoiding it totally.

am going to drink leek soup all day today to wash away the sins.  ;D

Funny this topic showed up today. My wife made Gaajar Halwa just yesterday. She actually makes it really well.

Actually WN, she wanted to make it that day you were over but since she had to go to work ... and it does take a while... she was unable to.

This may be a good time for a flight to chicago :)

I can say with authority that 2% milk works quite well. I have not tried 1%. Of course this is for the North Indian variety. For the East Indian variety, you need khoya or condensed milk. Our Gajorer Halua is more "kheer" (khoya, not rice pudding) than "gajor".

No I didn't put a gallon .. I managed to put too much milk ..but realized the mistake and then grated more carrot and added it.

My version is quite fast, the ratio of grated carrots to milk is 1:1 roughly with slightly less milk also being allowed.
Of course when I say my version, I mean the version read in 10 websites and 5 books but tested by me :)

Also there is a difference in opinion about when to add the sugar. I add the sugar when the milk is absorbed and then try to fry it. The gooey result cannot really be fried in the miniscule amount of fat I use. So some people suggest frying and then adding sugar afterwards.

I will try 1% milk someday soon.

Arre yaar ... when eating Halwa why worry about healthy stuff. Halwa and health is as much of an oxymoron as Ganguly and being good at facing fast bowling. :)

Khulle hi khao tub main nahao.

There is this friend of mine whose wife makes excellent chicken (Kban its the same person who you had met over Diwali). I always love her chicken and keep asking my wife to get her recipe. My wife finally got that recipe and I have asked her never to make it. The amount of butter/cream she puts in it is amazing. As they say ... Jitna gud dalega .. utna hi meetha hoga. When doing those indulgences you cant worry about calories. :)

makes sense .. fat digests slower than carb.
I am sure fried rice has a lower GI than plain rice.. but you are potentially trading one bad for another.. fat for fast-digesting carb ;D

Yep.. good vs bad carbs, good vs bad fats.

Atkins is passe..and thankfully so.. it is a dangerous diet.

I think most good diets are about balancing calories from macro-nutrients (carbs, proteins and fats) while getting enough micro-nutrients (vitamins and minerals).
