This year we are visiting extended family in Chicago for Thanksgiving.. they will be cooking.

Looking forward to your railway curry recipe. I turned vegetarian this year - so wouldn't mind a few good vegetarian recipes ;D

CLR, I am trying to decide between two recipes for mutton : 1) Khadewale masala ki gosht ( spicy dish from andhra) and 2) mutton roast (from calcutta and not spicy)

Let me know if you are interested.

Khade Masala ka Gosht[/size][/size]

Ingredients:

About 5lbs goat meat should feed 10-12 people.  Oil/Ghee: 1 cup.  6 medium onions finely sliced.  2 cups dahi.  2 tbsp coriander seeds.  10 cloves and 10 cardamoms.  2 1" stick cinnamon.  2 1" pieces of ginger.  2 tbsp chopped garlic.  12 dry red chillies.  2 tomatoes chopped.  Lime juice to garnish and taste.  Salt as needed.

Cooking:

Heat oil and fry half the onions till lightly browned.  Add mutton and stir fry till well browned.  Add curd, coriander, cloves, cardamom, cinnamon and enough water to cover all ingredients.  Cook until mutton is tender.  Add ginger, garlic, red chillies, tomato, salt and rest of the onions.  Simmer together on very low heat until it smells kinda right and the meat is really tender.  Add lime juice if you want. 


Mutton roast

Ingredients:

5lbs leg of goat.  2 tbsp each of onion, ginger & garlic paste.  6 tbsp of worcestershire sauce.  2 cups of oil.  2 tsp black pepper.  salt, water, 8 medium sized potatoes, 2 tbsp flour/corn starch.

Cooking:

Pierce the mutton all over with a skewer.  Marinade with all the ingredients for few hours. 

Heat oil to smoking in a large deep pan, reduce to med heat and fry the mutton well on all sides.  add the water to the pan, cover and let it simmer on low for 2-3 hours, basting it with juices that come out of it.  during the last 30-45 mins arrange the potatoes around the meat.  take out the meat andpotatoes when they are cooked.  (you can also use red wine/vinegar if you prefer)

Gravy: put the pan and all the juices back on the fire and wait for the fat to bubble.  add the flour and stir before adding water and cook until the gravy thickens.


I typically find it very hard to follow recipes and end up doing my own thing.  But, these are easy and should be good with your own variations as needed.  Enjoy!

I hope this is not too late. As promised, here is one of the more popular Lamb/Mutton recipes from the south-west coast. The same recipe may also be used as a base to create Biryani. Let me know if you need help in extending it into Biryani. Happy Thanksgiving!!

Mutton/Lamb Red Masala Curry

Ingredients

   Mutton or Lamb – 1 Kg
   Joghurt – 150 gms

For grinding :

   Chilli Powder – 1.5 Tsp
   Kashmiri Chilli Powder – 1.5 Tsp
   Coriander Powder – 2 Tsp
   Jeera Powder – 1 Tsp
   Turmeric Powder – ½ Tsp
   Pepper Powder –  ½ Tsp
   Poppy Seed Powder – 2 Tsp
   Fennel Powder – 1 ½ Tsp
   Cinnamon Powder – 1 Tsp
   Cloves Powder – ½ tsp
   Star Anis – 1 flower (star) ground
   Garlic cloves – 5
   Onions – 2 (medium)
   Mint leaves – 5
   Lemon juice – 2 Table spoons

For Frying :
   Onion – 1 (sliced)
   Tomatoes – 2 (chopped)
   Ghee


Method

   Cut the meat into pieces and cook the meat with a little water and salt. When the meat is half cooked take it off the fire.
   Fry the sliced onions in ghee. When they are brown add chopped tomato and fry.
   Now add the ground masala and fry well.
   Add curds and make into a thick paste.
   Add the half cooked meat and let it simmer until the meat is well cooked.

Well, since you asked for it. The following is a simple but a full meal recipe, though not festive enough for thanksgiving, good enough for a quick and tasty meal:

1. Vegetable Fried Rice

Ingredients

•   Rice - 2 cups,
•   Chilli powder – ½  tsp
•   Cinnamon powder ¼ tsp
•   Garam Masala -  ¼ tsp
•   Cloves - 8-10
•   Some cashew nuts (10-15)
•   ½ Kg chopped Vegetables - Beans, Carrots, potato, green peas, Capsicum)
•   Ghee
•   Dry chillies – 2 or 3
•   Salt

Method

•   Cut all the vegetables into small pieces.
•   Pour 3 teaspoons of ghee in the frying pan.
•   Add dry chillies, cloves and cashew nuts and wait till they get roasted.
•   Add the vegetables and fry until they are cooked fully.
•   Add salt, chilli powder, ground cinnamon, and garam masala powder. Stir well
•   Cook rice and allow it to cool.
•   Add rice to the vegetables and fry until all the items are mixed well adding some ghee as required.



2. Dal Thoi

Ingredients

•   Dal - 1 cup
•   Green chillies -  3
•   Ginger -  1 inch
•   Garlic -  6 cloves
•   Turmeric powder -  ¼ tsp
•   Oil - 2 tablespoons
•   Mustard Seeds and 3 dry chillies for seasoning
•   Curry leaves -  10
•   Salt

Method

•   Cook Dal in some water. Add turmeric while it cooks.
•   Add chopped green chillies, curry leaves, ginger, garlic and salt. Cook till the Dal is soft.
•   Heat oil in a small pot. Add mustard seeds and broken dry chillies.
•   When the mustard seeds have spluttered add this to the cooked Dal.


3. Mushroom Bhuti

Ingredients

•   500 gms mushrooms , thinly sliced (Pleurottes or Button)
•   1 onion, finely chopped
•   Ginger 1 inch piece finely chopped
•   1 cup grated coconut or desicated coconut
•   8 dry red chillies
•   1/2 cup tamarind juice
•   2 tsp coriander seeds
•   2 tbsp oil
•   salt to taste.

Method
•   Heat 1 tbsp oil in a pan. Cook the mushrooms with onion and ginger till the water dries out.
•   While it is cooking , roast both red chillies and coriander in a dry pan.
•   Grind together coconut, chillies, tamarind and coriander seeds in a blender. Add water only if required .
•   Once the water from the mushrooms has dried out, add the ground masala and salt.
•   Stir and cook till it all blends together and dries up. Add 1 tbsp of oil and mix well.

Thanks guys. I will parhaps make the leg roast for thanksgiving and the other two recipes by Vincent and Arjun over the next couple of months. Meanwhile, here is the Railway curry.

Railway Mutton Curry is a direct throw back to the days of the British Raj in India, when traveling by train was considered aristocratic. This very popular and slightly spicy dish was served in Railway Refreshment Rooms and on long distance trains, with Bread or Dinner Rolls. The curry was not too spicy keeping in mind the delicate palates of the British. It was also popular with the Railway staff who had to be on duty for long periods at a stretch. The vinegar or Tamarind juice used in its preparation would ensure that the curry would last for quite a few days and was an ideal accompaniment with rice as well. The recipe for this dish is sure to bring back some happy memories for many an old timer.

RAILWAY MUTTON CURRY

Serves 6 Preparation Time 45 minutes

½ kg mutton or lamb cut into medium size pieces
6 peppercorns
2 big onions sliced
2 pieces cinnamon
2 cloves
2 cardamoms
8 to 10 curry leaves
4 red chilies broken into bits
1teaspoon chilly powder
1teaspoon ginger garlic paste
Salt to taste
2 tablespoons oil
2 tablespoons vinegar or ½ cup of tamarind juice

Wash the meat and mix it with the ginger garlic paste, salt and the chilly powder. Heat oil in a pan and fry the onions, curry leaves, red chillies and spices till golden brown. Add the meat and mix well. Fry for a few minutes. Add the vinegar / Tamarind juice and sufficient water and cook on medium heat till the meat is done. Keep frying till the gravy is thick and dark brown.

We enjoyed a good pre-thanksgiving dinner cooked by Mrs CP (and CP) on Wednesday and a full-fledged Turkey meal (I enjoyed the veg portions only) the next day with extended family.

I wanted to do Arjuna's lamb roast, but the person who was to get me a mutton leg ditched at the last moment. Apart from that, there was cornish hen roasted, Mrs. WN's famous gobi Mussalllam, dal fry, sauteed mushrooms with parsley, garlic-spinach (saag) Bengali style, mashed potatoes made with mustard oil (Bengali style), ice cream, and single malt scotch. Blurp!!
