finely chop a small onion and saute it in veg oil till its soft and has lost it's pungency. add a teaspoon of ginger paste and continue frying on a low flame. when nearly done [oil starts leaving the sides], add the prawn, and quickly add a heaped tbsp of ground white mustard. when prawn turn coral pink, add a can of coconut milk, let boil for say 3-5 mins, take off flame and add a dash of full cream. before serving, garnish with finely chopped cilantro.

given that i have no white mustard...would regular mustard do?

dijon? NO NO

most prepared mustard in the USA comes with a lot of additives esp vinegar. best is to grind your own ... use white mustard seeds for fish.

prawn curry is quite simple -
i made some a couple of months ago.

start with 2 onions, (5-6) red chillies, ground dhanya and cumin, fry these. add 3-4 cloves crushed garlic, 1 tsp ginger, 3-4 tbsp of tomato puree, dash of haldi, peppercorns. you can add cloves and/or garam masala, but these dont do it for me.
add the milk and let it mix for 10 mins, put in some salt, then add the prawns and heat on low flame till they turn a pink color. add some lime juice and then let it sit. tastes best the day after, but a couple of hours will do.

an alternate recipe you can try is make a paste out of green chillies, cumin, mustard, garlic, haldi, red chilli powder, 50ml water and 1 tbsp oil, and marinate the prawns for an hour or 2. then in the frying pan, fry 2 onions till golden brown (in oil), add prawn marinade, ginger, puree, and finally the milk. lime juice once the prawns are done and the gravy is thick

This is a typical Coastal (Karnataka,Kerala) recipe for Prawns. Easy and very tasty. It does not use Coconut (since Coconut is usually used for other fish but not Prawns). But if you really want, you may add it instead of water to dilute the curry. Youmay also add chopped tomatoes while frying spices,but then do not add coconut juice.

Prawn Curry : Kerala/Karnataka Style


Ingredients :

Prawns - 500 gms
Onion - 1 Medium
Ginger – ½ Inch
Green chillies - 1
Garlic Cloves - 2
Chilly powder - 1 Teaspoon
Coriander powder - 2 teaspoons
Turmeric powder - ½ tsp
Fenugreek powder -  ¼ tsp
Pepper powder - ¼ tsp
Tamarind Juice – 1 cup
Oil - ½ cup
Mustard seeds - ½ tsp
Curry leaves - 1 sprig
Salt - As reqd


Method:

Clean the prawns very well.

Cut onion, ginger, garlic into very small pieces. Slit Chilly.

Heat oil in a pan.

Add mustard seeds and when it splutters, add onion, ginger, garlic,chilly and curry leaves.

Fry well till onion turns light brown.

Add all the spice powders and mix well.

Add the Tamarind juice and mix well. Fry for some time. Add some water if needed.

Once the spices are well mixed bring it to boil and add prawns. Add salt. Cook for 10  Minutes.

Let it simmer for further 10 minutes under low fire.

In Kerala or Coastal Karnataka 70% of chicken dishes use either coconut juice or grated/desicated coconut or both. Yoghurt - for marination - is used typically in North Indian dishes. Having said that, there are many Chciken recipes which do not use coconut. Below are two simple and most popular ones. These dishes of course are tastier if you use chicken with bones - legs, thighs or both rather than breast chicken which is better for stir-fry.

1 kg Chicken (cut into medium pieces)

3 sticks of cinnamon
2 Spoons of Oil
1 onion (thinly sliced)
3 tomatoes chopped

1 Tsp of Red Chlli Powder
2 Spoonfull of coriander leaves
2 tsp jeera powder
1 tsp tumeric powder
3 cloves of garlic
1 inch ginger
1 Green chilli
½ Tsp of Pepper Powder
1 cup of tamarind juice


Method:

Boil the Chicken until half cooked, with cloves, Cinamon, Salt, some water and keep aside.

In parallel, take oil in a pan and fry onion slices till golden brown, then add tomatoes fry and then add the masala and fry thoroughly for about 15 minutes.

Add the half-cooked chicken along with stock and bring it to boil. Lower the heat and simmer until the chicken is well cooked.


Chicken Green Masala

Ingredients:

1kg chicken
2 Onions sliced

1 bunch of coriander leaves

I know some people do not like to chop chicken especially vegetarians..(I knew couple of vegetarians who used to cook chicken for their kids but had their chicken chopped by the butchers.)

If you have small enough thighs and legs - which is mostly the case if you buy them in super-market packets - you can leave them whole. Even skinning is not needed unless you want to. You can always seperate the skin while eating....

i am not queasy about meat since i have always lived with people who cooked/ate meat since undergrad days. i got used to finding crabs/lobsters wriggling around in the kitchen sink. i hardly cook meat and usually, i have someone else help me, if a lot of handling is involved - more coz i dunno what i am doing.

i have tasted most meat/seafood - never developed a great desire for it and decided to remain a vegetarian. also seems a healthier option anyway.

i have tasted most meat/seafood - never developed a great desire for it and decided to remain a vegetarian. also seems a healthier option anyway.

Tried Soy milk? I did for the last month.. it took some getting used to.. but felt it is easier on the stomach. For additional calcium, fortified OJ does the trick.

One more thing:

If you are not a big chicken eater yourself, you may also want to add 2 or 3 potatoes cut into large cubes about 15 minutes before you turn off the fire (for both recipes). They taste good along with gravy and some chicken.

Is it difficult for you to cook non-vegetarian dishes when you are a vegetarian? How do you overcome it?

i am not queasy about meat since i have always lived with people who cooked/ate meat since undergrad days. i got used to finding crabs/lobsters wriggling around in the kitchen sink. i hardly cook meat and usually, i have someone else help me, if a lot of handling is involved - more coz i dunno what i am doing.

i have tasted most meat/seafood - never developed a great desire for it and decided to remain a vegetarian. also seems a healthier option anyway.
Was just reading a book on vegan diet .. the science appeared sound. May have to give it a try for a month or so.

(BTW, your "friend" is vegan).

i've never been vegan! can't live without milk :)

Tried Soy milk? I did for the last month.. it took some getting used to.. but felt it is easier on the stomach. For additional calcium, fortified OJ does the trick.

There is no substitute for milk. I have heard/read so many horror stories of health problems of people who drank only soya milk for years. Unfortunately I do not have any in my archives anymore.

I had read stories ranging from brain mal-functions to reduced manhood etc. Below is one I found now.. The whole article is long and hence I have the URL below:
